 Carrot Cake

I saw this and thought oooo ... sounds nice.. and I am sure it can be converted for SW too.. I stole it off a site.. something chem....

Was going to try it first but thought I would share in case anyone has tried it.


NC CARROT CAKE
200g porridge
200g bran flakes
2 egg whites
1/2 pint milk
1 tsp cinnamon
1 heaped tsp baking powder
Splenda 2-3 tbs more if you want it sweeter
250g grated carrot
8oz tinned pineapple in juice, drained

TOPPING
150g plain elf cheese
Zest of an orange and a tablespoon of the juice
Sweetener to tate

Blend the carrots even smaller still, then blend the pineapple well seperately.
Mix the porridge oats, the bran flakes and milk , leave to soak for ten minutes.
Add the pineapple, carrot, egg whites, splenda to your taste and the cinnamon , mix together.
Place in a greased 8" cake tin and bake for about an hour.

TOPPING
Blend all ingredients together and spread on cake

Mmm I don't know.. I mastered that it might be.. extra light fromage frais maybe... or a type of cheese?
