Cheese-topped Bangers and Mash Pie

serves 4
Fry Light
1 onion, finely chopped
2 garlic gloves, crushed
8 quorn sausages, roughly chopped
14oz can chopped tomatoes
14oz can mixed beans, drained and rinsed
7oz frozen mixwd vegatables
3 tbs soy sauce
salt & freshley ground black pepper
fresh chopped herbs, to garnish
Topping
2lb potatoes, (king edwards or desiree) peeled and roughly diced
salt & freshley groung black pepper
2 tbsp very low fat natural fromage frais
1 egg beaten
4oz chedder cheese grated
pinch of grated nutmeg
4 tbsp dried parsley
Preheat oven to 180/ gas 4 and prepare the topping. Boil the potatoes in lightly salted water for 15-20 minutes until soft. Drain and mash with the fromage frais, beaten egg, cheese, nutmeg and dried parsley. season well and set aside.
Spray a pan with fry light and cook the onion, garlic, sausages and tomatoes. Stir and cook for 20 minutes. Add the mixed beans, mixed vegatables and soy sauce, season and pour into a oven proof dish. Carefully spread the potatoes mixture over the top.
Cook in the oven for 25-30 mintues until the topping is lightly browned. Serve garnished with the freshly chopped herbs.
