Meatballs in Tomato Sauce
Ingredients
454g/1 lb extra lean minced beef
1 level tbsp chopped parsley
seasoning
1 clove garlic, crushed
½ level tsp cumin
1 egg, beaten
2 onions, finely chopped
1 level tbsp tomato purée
pinch grated nutmeg
397g/14 oz can chopped tomatoes
½ level tsp artificial sweetener
Method
1. Place all the sauce ingredients in a pan and bring to the boil. Reduce heat and simmer gently for 10 minutes while making the meatballs.
2. Place the lean meat, parsley, seasoning, garlic and cumin in a mixing bowl. Mix well until evenly combined. Add the beaten egg and mix well.
3. Divide into 20 portions and shape into balls with wetted hands. Carefully add to the tomato sauce. Cover the pan and simmer for 30 minutes until the meat is cooked thoroughly. Serve hot with a selection of Free vegetables.

Can be Frozen
Cool and transfer to a freezer proof container. Thaw overnight in the fridge. Reheat for 25 mins until piping hot.
