Chicken Ghassi

Fry Light
1 large onion peeled and finely grated
4 skinless and boneless chicken breast, cut into bitesized pieces
1tsp garam masala
1 tsp peeled and finely grated ginger
2 garlic cloves peeled and crushed
1 - 2 tsp mild or medium chilli powder
1/4 tsp tumeric
250ml chicken stock made with bovril
200ml reduced fat coconut milk
salt
1. Spray a frying pan with fry light and place over a medium heat. Add the onion and stir fry for 8-10 minutes until it starts to lightly brown.
2. Add the chicken and continue to fry for 4 - 5 minutes, stirring occasionally, before mixing in the garam masala, ginger, garlic, chilli powder and tumeric.
3. Pour over the stock and coconut milk, bring to the boil, season with salt, cover tightly and reduce the heat to low. Simmer gently for 20 - 25 minutes, stirring occasionally, until the chicken iscooked through. Serve immediately
