14 fl oz vegetable stock
1/4 teaspoon tumeric
1/4 teaspoon paprika
1/4 teaspoon ground coriander
6oz couscous
2 salad tomatoes diced
1 x 3in piece cucumber, peeled and diced
1 red pepper, seeded and finely diced
2 spring onions, finely chopped
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley
juice of 1/2 a lemon
salt and freshly ground black pepper
In a saucepan, bring the stock to the boil, add the spices then the couscous. Remove from the heat and cover with a lid for 1 minute
Pour the couscous into a large bowl. Add the vegetable and the herbs, mixing well and season to taste.
Just before serving, drizzle with the lemon juice. Serve hot or cold
