This is well worth doing - its fantastic - honestly!

9 syns whole cake

4 crushed scan bran
5 oz grated carrot
juice and finely grated rind of 1 orange
1 tsp cinnamon
1 tbsp runny honey
3 eggs - beaten
1 weetabix - crushed
half tsp mixed spice
1 tsp nutmeg
2 tbsp mincemeat
4 tbsp splendor/canderel

Pre heat oven to 180c or equivalent
Place all ingredients in large bowl and mix well
Put mixture in lined tin, cover with foil and bake for 30 mins. Remove foil and bake for another 15 mins or until firm.

If you want a topping (I don't bother, this is great on its own) you can make it from quark mixed with sweetner with some grated orange rind in)

Do you weigh the carrot before its grated or after? The only reason I ask is because you lose a lot of liquid when you grate the carrot.
