 Moorish Chickpeas

Moorish Chickpeas


1 large onion, chopped
2 garlic cloves, crushed
1 green pepper, deseeded & sliced
2 x 397g / 14oz cans chick peas, drained
397g / 14oz can chopped tomatoes
1 tsp ground cumin
1 tsp dried oregano
1 tsp ayenne pepper
salt & ground black pepper
198g / 7oz can sweetcorn


Place all the ingredients, except the sweetcorn, in a large saucepan. Bring to the boil, cover and simmer for 20 minutes until the onions and pepper are tender. Season to taste and add the sweetcorn just before serving. Can be served hot or cold.

Serves 4

Syn free on Green

Can Be Frozen

Allow to cool then transfer to freezer proof container. Leave to thaw overnight in the fridge. Reheat gently in an uncovered saucepan for about 20 mins until piping hot adding a bit of water if needed.
Can also be microwaved
