INGREDIENTS:
• 1 tin of chickpeas (drained)
• 3 eggs
• Grated rind and juice of one lemon
• Grated rind and juice of one orange
• 1 level tsp baking powder
• 2oz canderell
METHOD:1. Preheat oven to gas mark 5 (180)
2. Prepare loaf tin with grease paper and spray with fry-lite
3. Blend chickpeas until smooth. Add lemon and orange rind, canderell, baking powder and eggs
4. Bake for 45 min. Cake is cooked when inserted knife comes out clean.
5. Drizzle over fruit juices while cake is in the tin, allow to cool for 10 min
