Bacon, beans and hash browns

1lb 12oz potatoes
6 spring onions
5 eggs
1 tsp oregano
salt and freshly ground black pepper
fry light
12oz lean bacon, all visible fat remover
2 x 14oz cans baked beans
chopped parsley and spring onion, to garnish
Coarsely grate the potatoes, squeeze out as much liquid as possible and place in a bowl. chop the spring onions, add to the potato with 1 egg, the oregano and seasoning and mix. divide into eight portions.
Spray a frying pan with fry light and, working in batches, fry the hash browns on both side for about 10 minutes until lightly browned and cooked through.
meanwhile, grill or fry the bacon and remaining eggs in fry light and heat the beans in a pan. Serve the hash browns with bacon, egg and beans, garnished with chopped parsley and spring onions.
