Corned Beef Quiche
Ingredients
200g tin extra lean corned beef (4 syns),
Onion,
Red pepper,
Salt & pepper,
3 eggs,
v.l.f.natural cottage cheese,
Sliced tomatoes for top (optional)
Method
Chop or mash down the corned beef.
Cook the onion and pepper in Frylight until softened.
Layer the meat, cottage cheese and onion/pepper mix into a quiche dish.
Whisk the eggs and pour over the top. Cook in the centre of a medium oven until set and golden on top (about 40 mins).
